Baked Apples with Granola

Serves 10-12



INGREDIENTS:


  • 6 large apples, peeled, cored and thinly sliced

  • juice of 1/2 lemon

  • 1/4 cup all-purpose flour

  • 1/3 cup light brown sugar

  • 1/2 tsp ground cinnamon (or more to taste)

  • 3 cups dried fruit and nut granola

  • 2 Tbs butter, melted

  • 2 Tbs light brown sugar

  • yogurt or ice cream for garnish (optional)



PROCEDURE:


Preheat the oven to 350 degrees. Before peeling and slicing the apples, squeeze the juice of half a lemon through a strainer into a mixing bowl to help keep the apples from turning brown. Throw one peeled and sliced apple at a time as you go into the bowl and toss those around in the juice.


Once all the apples are in the bowl, add 1/4 cup all-purpose flour and 1/3 cup light brown sugar and a sprinkling of ground cinnamon and mix that up. Put them in a 9 x 13-inch baking dish and give the apples a 15 minute head start in the oven, before adding the granola.


Baked Apples with Granola
Dan Eaton shows us how to make a delicious baked apple with granola dessert. One part baked apple, one part crisp!
Before you put the granola topping on, toss the granola with 2 Tbs of melted butter mixed with 2 Tbs light brown sugar. Pull the partially baked apples out of the oven and spread the granola over the top of that and then to help keep the dried fruit from drying out any further, put a sheet of aluminum foil over the top before popping it back into the oven.


After a total baking time of 35 minutes it should be good to go, or you could pop it back into the oven for another 5 minutes or so to crisp the top up a bit.


HINTS:


Use plain granola and add your own dried fruit and raisins if you can't find dried fruit and nut granola.
